I woke up craving pumpkin muffins! I love to make my recipes healthy so I don’t feel too guilty eating them, so here is my recipe for healthy pumpkin muffins! (no oil, no butter–egg whites, yogurt, splenda, and whole wheat flour!)
Makes about 12-16 servings!
Recipe ingredients:
-1 1/2 cup whole wheat flour
-1 cup pumpkin puree
-1 cup splenda
-1-6oz vanilla greek yogurt
-1 tbsp honey
-1 tsp baking soda
-1 tsp baking powder
-3/4 cup brown sugar
-1 tsp vanilla
-1/2 tsp nut meg
-1/2 tsp all spice
-1 tsp salt
-1/3 cup egg whites
-optional: chocolate chips and walnuts
1. Preheat oven to 375
2. Mix together the flour, baking soda, salt, baking powder, and all spice and nut meg mix!
3. Add in the brown sugar, splenda, yogurt, vanilla, egg whites, honey, and pumpkin puree.
4. Mix all ingredients until smooth!
***if you desire to add chocolate chips, walnuts, or other goodies into the mix, do so now..
5. Fill muffin cups half way and bake for 12-15 minutes!
Let them cool for 10-15 minutes & enjoy!!
